Upper Moutere, New Zealand
Neudorf Mushrooms is a small, unique company situated in the historic Moutere area.
Hannes and Theres Krummenachers, originally from Switzerland, were the first in NZ to commercially grow edible wild mushrooms, including the amazing saffron milk cap, at a time when only button mushrooms were available.
4500 trees host their mushroom crop, in a symbiotic relationship. The fungus penetrates the cell wall of the roots and exchanges nutrients in return for sugars produced by the tree. Hannes and Theres are passionate about producing the best possible fungi so employ organic principles.
All the timber from the pruning is used to fuel a custom-built wood-fired dryer which runs 24-7 during harvest, from late March until the end of July. They were harvesting all through lock-down so all current stock is from the 2020 harvest.
Their gourmet crop has won them acclaim from chefs and food lovers alike. We love the simplicity of their mushroom risotto, just add the stock and a good handful of parmesan, the mushroom salt is a must for every spice draw and the mushroom soup is a perfect winter warmer.
